How to Wine Taste in a Restaurant.

December 13, 2009

Wine has always been a satisfying and enjoyable complement to a lovely meal at a restaurant. Wine tasting in a restaurant is a very rich and rewarding experience. Once you have made your wine selection, there are a number of steps involved in properly tasting the wine that will make the wine tasting experience even more pleasurable.

1. Smell the Cork: Detecting the aroma from the cork will tell how well the wine has been taken care of. Once the cork has been removed from the bottle, examine it to make sure it is not dry, cracked, or has mold growing from it. If the cork is dry on both ends, this means that oxygenation took place which affects the taste. If everything looks good, (one end containing wine and the other end dry) smell the end of the cork that contains wine. It should not have any unusual aroma such as a musty or sharp smell.

2. Smell the Wine: Pour a small amount of wine in a glass. (No more than few ounces in a glass) Hold your glass and gently swirl it around. This will cause the wine's aroma to be released. Raise the glass to your...

What are the Health Regulations and Codes for Canadian Restaurants?

December 10, 2009

When one owns a restaurant in Canada, they have to follow strict health regulations. In Canada, each province is responsible for implementing health codes and regulations for restaurants. The purpose of these health regulations is to ensure cleanliness and prevent illness, especially preventing diseases and illnesses that can be dangerous to one's health. Across Canada, restaurant and food service inspection is performed by provincial governments, municipalities, or regional health authorities. As well, the Canadian Food Inspection Agency is involved with protecting people from unsanitary food and restaurant practices.

Although Canadian provinces implement their own health codes and practices, the following are common general health safety requirements for running a clean and healthy restaurant:

There should be a minimal risk of food contamination.

What are the Liquor Laws regarding Restaurants in Canada?

December 10, 2009

In Canada, when one has a restaurant that serves liquor, they are required to have a liquor license. Issuing a liquor license is the responsibility of provincial governments. The guidelines for obtaining a liquor license in Canada can vary, but there are general laws that restaurants must abide by in order to receive and maintain a liquor license.

Each province will categorize liquor licenses into specific licenses or classes. Generally speaking, this can include: special event licenses, licenses for restaurants, lounges... etc., licenses for recreational facilities, canteens...etc, licenses for private clubs, licenses for retail liquor stores, hotels...etc, and licenses for making liquor. How the various establishments are classified will depend on the province.

The purpose of these licenses is to ensure that liquor is being managed in a responsible manner. In each province's plan, "liquor" refers to all categories of beverage alcohol including beer, wine, spirits, liqueurs, and coolers. The regulations serve as direction on how to sell, serve, manage, and purchase alcohol.

In general, liquor laws in Canada can include: how and where one can drink alcohol such as not permitting customers to leave the restaurant with the alcohol, the age of which one can be served alcohol, how...

Recipe for Traditional Spanish Paella.

November 15, 2009

Paella, the rice-based Spanish dish, is one of the most internationally known recipes. It is also very versatile, allowing many variations as long as two main ingredients are consistently present: Rice and Saffron. Other than that, this dish can really take many ingredients. Even the rice can be of any kind. I buy the medium or long grain that can be found at any grocery store, and it makes a fine paella.

Saffron, however, is another matter. I still remember an invitation to a paella cookout in California many years ago. Our hosts had prepared an outside burner, the typical paella cooking pan and a large array of “yummy” ingredients to add. When they started cooking they pulled out a container of “yellow #5” food colorant and added it to the pan. My husband and I instantly looked at each other and said: “ It is not paella.” I will leave up to you to consider the importance of real saffron when preparing a good, real paella. Saffron adds the typical yellow color to the rice, but it also adds its characteristic flavor.

I share with you my traditional recipe for Spanish paella, passed down for many generations in my...

The Wonderful Differences Between Mexican and American Food.

November 8, 2009

The Wonderful Differences Between Mexican and American Food.

It should not be a surprise to anyone to hear that the neighboring countries of the United States and Mexico have different cuisines. Nor is it surprising to hear that Mexican food recipes and recipes for traditional American dishes are quite different. What is surprising is that they are different - quite often, countries which border each other have somewhat similar culinary traditions, such as is the case between the US and Canada. So why is it that our food is so different from Mexican food anyway?

Mexican Food History

There are two important reasons why Mexican food differs so greatly from the standard fare in the United States. One is historical. Unlike the United States, Mexico spent a much longer time as a Spanish colony than did the US. It is true that parts of the US were originally Spanish territories, though the Spanish colonial period lasted for a much briefer length of time here, with the influence of Spanish cuisine being pronounced mostly in regions, which were once Spanish territory, largely those bordering Mexico.

The US has a different history, being a former British colony with most of its early...

Aphrodisiac Food: let the Aphrodisiacs of nature get you in the mood.

November 4, 2009

If things are a little lame in the bedroom see what nature's tonic of love can do for you. Put the pills aside and see how food can get you in the mood.

Prior to medical professors introducing the world to Viagra in their present day successful endeavour's to produce a antihypertensive drug, nature provided the means to enhance and increase sexual appetite.

In less modern times, cultures would experiment with food in search for new and powerful aphrodisiacs in their quest for the same outcome modern day Viagra provides.

In ancient Roman times the common carrot was said to expel the sexual suppressions of female prisoners when carrots were cooked in stock. Tomatoes were claimed as a powerful love potion which resembled a human heart according to Italian doctors.

The start of the new fig harvest in Ancient Greece initiated a tradition of sexual activity among husband and wife with the fig being related to love and reproduction. A blooming fig was compared to that of the female sex organ.

The testicle tree, known in modern times as an avocado, was how the Aztecs referred to an avocado tree based on the dangling pairs of fruit.

There are several...

Food Service Tips

Working in the food service industry is a fun but challenging job. You are constantly moving, interacting with a wide variety of people, overcoming new and unique obstacles, and learning new things every single day. While it can be a lot of fun, it can also be ridiculously stressful and difficult. The following tips should help those who are interested in these fun and exciting careers.

First you have to look at your job professionally. You are going to get rude customers, angry people, and nasty attitudes. Its just part of the human condition, and whenever you interact with lots of people, you are eventually going to run into the less friendly types.

What you have to remember is that the rude comments and nasty attitude are not directed at you. They are directed at the mask, the persona of "professional" which you wear over your real identity. This is a way of protecting yourself from hurtful comments and gestures. By being professional, you can let the mask take all of the dings and dents that come with working with unsavory people, leaving your real personality intact beneath.

Another issue in the food service industry is personal...

I Love French Wine and Food - A White Chateauneuf-du-Pape

August 30, 2009

If you are hankering for some fine French wine and food, why not consider the Rhone Valley region of southeastern France? You may even find a bargain, and I hope that you'll have fun on this fact-filled wine education tour in which we review one the area's best-known wines, a white Chateauneuf-du-Pape that comes from some of the stoniest vineyards on earth.

The Rhone Valley ranks second in acreage among France's eleven wine-growing regions. It's really a question of two separate areas with very different wines. The narrow northern Rhone Valley produces only a small fraction of the Rhone wines. Its major red grape is Syrah, and its major white variety is Viognier.

Traditionally wines in the southern Rhone Valley are blended. For example, both the red and the white Chateauneuf-du-Pape AOC wine may include over a dozen different grape varieties. The white Chateauneuf-du-Pape reviewed below includes four varieties, White Grenache, Rousssane, Bourbuolenc, and Clairette. With the exception of Roussane, these are not considered particularly high-quality grapes. Many of the other permitted varieties are also pedestrian grapes. And yet Chateauneuf-du-Pape is considered a fine wine. You will never see it on a $10 wine list. Only once in a while...

RETRO SWEETS: The Top 5 Retro Sweets You Can't Get Anymore But you Wish That You Could

The Top 5 Retro Sweets You Can't Get Anymore But you Wish That You Could...

Everyone loves sweets, and the sweets that they remember from their childhood especially.

Although not widely available, many favourites like gobstoppers, sugar mice, sherbet pips and toffee bonbons are still manufactured to this day.

But other classics have sadly become casualties of time and 'progress'.

At our online sweet shop we are often asked what are our most requested sweets that are no longer available. Here is our top 5 list of sweets that will make you go all misty eyed but which even we can't get anymore:

Texan Bars

Texan is our most requested chocolate bar. Texan was a chewy nougat centre covered in milk chocolate. It was made by Macintoshes (now part of Nestle).

Launched in 1975, the Texan enjoyed huge massive success until the miners strike in the 1980s. The problem, so it is believed, was that Texan Bars were manufactured in Halifax in Yorkshire, and due to the miners blockages of major roads and sites, no-one could get the ingredients to make the Texans to the factory and so production was stopped, never to restart.

That is until late 2005 when...

CHILES - The Mysterious History and Variety of Chiles

July 4, 2009

"A day without chile is a day without sunshine" Sarah Moulton, Executive Chef, Gourmet Magazine

Chiles are members of the Nightshade family- a diverse family of plants which includes potatoes, tomatoes and eggplant, tobacco and petunias. Nightshades all evolved in the Americas—however, the exact origin has been debated. Some experts have claimed chiles were first discovered around the equator; however, some have theorized the first chiles were small berry-like fruit that grew under the mantle of the forest. No one knows for sure.

No one knows the exact date when chiles were discovered; though we do know it was many thousands of years ago. There are several ancient references to chiles in Egypt, all of Africa, Hungary and the rest of Europe, and in China and they were well liked in those past civilizations. Chiles were taken back to China and Tibet by the Chinese and Tibetans that were the first settlers in the Western portions of the Americas.

There are thousands of different varieties of chiles but it could be argued that there are fewer varieties of the Mexican types. Mexican chilis have different names for the different stages of their growth. For example, Poblano chiles (a green chile)...

Improve Your Vegetable Garden!

Green Living Tricks to Enhance Your Green Thumb Success...

When it comes to gardening, there are some additional benefits to just having your own fruits and vegetables. Not only can you be a "green" thumb, but you can be a contributor to the "green" living movement by recycling common household "garbage" items into useful, and helpful, garden utensils.

Take the common soup can. By removing the top AND bottom lids, this cylinder becomes a useful starting pot. Removing the top and bottom lids will help aid in the removal of your plant start with greater ease. Now, don't throw away those lids! The lids can be placed at the base of light loving plants, such as tomatoes! The lids will reflect sunlight, thus providing extra light. In addition, the reflected light has been shown to repel plant eating insects and aphids. To deter birds from your fruits trees, punch holes in the lids and hang them from tree branches. Apparently the reflected light and movement scares these rascals away.

Another "green" idea for recycled starting pots are used, washed, individual jello or pudding containers! They are just the perfect size to start individual plants! It is also wise and frugal...

TRUFFLES: Cooking With Truffles

May 28, 2009

Truffles are hypogenous (underground) mushrooms that resemble stones and vary in size from a marble to a large ball.
Few truffles are poisonous. However only a small number of truffles are considered to be delicacies by people throughout the world. Most truffles do not break the surface of the oil and instead must rely on animals to eat them and distribute their spores in order to grow more of their kind. To attract animals, truffles developed scents that grow stronger as they mature. Truffles grow 3 to 12 inches usually outside the roots of trees such as the oak, chestnut, and hazelnut and do not grow beyond the range of the branches.
Truffle hunters or truffle farmers use trained pigs or dogs to locate the truffles that may be underground and ready to be taken carefully out. Truffles are not easy to cultivate and although farmers and scientists have managed through the last thirty years to improve the ability to grow truffles there is still not a full guarantee of growth. Truffles can take six or more years to mature before it can be seen if truffles are growing or not. When truffles are ready to harvest the process is...

Kids Cakes - 5 Types of Icing

May 28, 2009

Nothing puts a smile on a child's face like viewing their birthday cake for the first time. And lets face it, few things out there are as satisfying for us mothers either.

Decorating a special cake for your child can be so much fun. For our girls, whimsical themes and gelati colours are in order, and for our boys, bright, bold and colorful is all it takes to make a little man smile.

But what icing is best for the type of cake you want to create?

I categorize icing into 5 main types, and each one has its place in the cool cakes for kids arena. Understanding the types if icing will help you successfully plan your groovy cake design and save you a lot of heartbreak.

#1: Buttercream

Buttercream icing is a combination of softened butter, fine sugar and some sort of liquid flavor and coloring. It is essential to use a fine sugar when making buttercream icing as it melts very easily and importantly, contains small amounts of cornstarch which helps to stabalize the icing…This also explains why it doesn't taste so good in coffee!

Buttercream icing is so easy to work with as it's smooth consistency...
