Do You Really Need a Culinary Course and Credentials to be a Chef?

"Brian, do I really need to take a culinary course and get my credentials to get a good job as a cook?"

It's a question I've been asked a lot over the years.  And the answer is -- yes and no.

Many famous chefs have worked their way up through the kitchen ranks -- starting as dishwasher, up to prep and sandwiches and so on.  It's been done and it's still being done.  On the other hand, many executive chefs in restaurants and hotels won't hire unless their applicants have papers and a track record of some sort.

Most managers just don't have the time to train someone from scratch.  They want experience from the get go.  And if you don't have experience, the best way to get it is by taking an accredited culinary course.  The added bonus to taking a course is this: near the end of every culinary course, the head chef will get calls from local restaurant managers and executive chefs asking, "Who are your top students?"  I don't mean to brag, but this is how I got my first job.  I went on from there to get my Journeyman Certificate and Chef's membership in...

The Swedish journalist Stieg Larsson has become a global sensation in a remarkably short time.

MONTREAL CANADIENS: The REAL Stanley Cup Champions of 2010 - and Why!

In 1892, the then Governor General of Canada, Lord Frederick Arthur Stanley, dedicated a Silver Bowl to the people of the Dominion of Canada for, "the champion hockey team in the Dominion."

The Stanley Cup became the ultimate prize for Canadian hockey teams, awarded first in 1893 to the Montreal Amateur Athletic Association (AAA). The cup has been won every year since (except 2005 - the Black Year of the Lockout - when the NHL refused to release the Cup to another League).

In 1919, the Stanley Cup Champions, Montreal Canadiens, traveled to Seattle to play a post-Championship exhibition series with the Seattle Metropolitans. The series was cancelled because of the Great Influenza Epidemic. The Americans still like to refer to 1919 as "no decision."

In 1926, the National Hockey League "adopted" Lord Stanley's Cup as their own and have possessed it up to this writing.

Not every Canadian agrees with this "adoption" or the teams that have been proclaimed champions.

The Paleo Diet vs. The American Diet

In America obesity is out of control, diabetes is an epidemic and chronic diseases are increasing. The Journal of Food Composition and Analysis states that one-third of our calories are from junk foods, soft drinks, sweets, alcoholic beverages and salty snacks. Soft drinks and other junk foods are considered "empty calories" high in calories but having no nutritional value. High in calories, no nutrition but contributor to obesity, diabetes and chronic illnesses.

We all have stressful and hurried lives. It is convenient picking up fast food for lunch or dinner. We treat our kids on the weekends picking up fast food. Or having a bag of chips. But is it healthy? The answer is no. There is scientific evidence that there are strong links between what you eat and health.

Delicious Homemade Broccoli Quiche Recipe.

A French dish that's actually originated from Germany, a quiche dish is easy to make and it's wonderful to make for a potluck or any homemade holiday event.

Usually a baked dish made with eggs and cream, this light and fluffy dish will have a creamy flavorful sensation in your mouth. Here is a quick and easy way to make a vegetarian broccoli quiche recipe.

Mexican Holiday Pastries: Rosca de Reyes

The holidays are here again, and what more can these season be more festive than wonderful traditional desserts. Rosca de Reyes is one of those traditional dessert that honors the Mexican heritage in the Yuletide Season. Also known as the Ring of the King or the king's cake, this bread is typically served on Three Kings Day or the 6th day of January.In the Nativity Story, there where the Three Wise Men who came from the east bearing gift of gold, of incense and of myrrh for the baby Jesus.

Because of this, the traditional gift giving does not only happen in Christmas but well into the New Year. If the western have their Santa, in Mexico they have The Three Kings. Rather than stocking, children leave their shoes out on the eve of Three Kings Day with hopes that it will be filled with goodies when morning comes.
