1 - Poor Screening

The costliest mistake is accepting a new tenant without properly screening. An undesirable tenant will often have a poor rental and financial histories. Landlordsshould review previous landlord relations, credit reports, courthouse records and income. It is probable that if they have not met their obligations with previous landlords, then chances are that they will repeat their behavior with new landlords. Many landlords have faced horrific situations where tenants have stopped paying rent while employing legal maneuvering to avoid eviction. It can be tedious to keep track of the mileage, but it really pays off since the IRS allows you to deduct about 45 cents/mile. How to make Puff Pastry - Easy Puff Pastry Recipe

In this article I will show you how to make Puff Pasty. Also called pâte feuilletée, puff pastry is the only dough that achieves its height solely through lamination.

Classic puff pastry produces the highest rise of any of the laminates. It is best used in any recipe where the pastry itself must shine. Bouchées and vols-au-vents--pastry shells designed to hold fillings--require the height that can be provided only by classic puff pastry.

Elaborate designs can be incised onto the pastry, creating a stunning decorative effect. Pithiviers, a French dessert of a rich almond cream baked between two circles of puff pastry, is decorated in this way. The fruit filled turnover is another product best made with classic puff pastry. Recipe makes 2 pounds 11 ounces dough. Follow the directions very carefully:

HOW TO MAKE PUFF PASTRY - EASY RECIPE

INGREDIENTS :

DOUGH

3 cups unbleached bread flour 3 lb 8 oz

½ cup cake flour 8 oz

1½ tsp salt 1 oz

¼ cup unsalted butter, melted 8 oz

1½ tsp lemon juice 1 oz

¾ cup _ 2 Tbs (7 fl oz) ice water 1 lb 12 oz

BUTTER

2 cups unsalted butter, cut into 1-inch chunks 4 lb

5 Tbs unbleached bread flour 6 oz

DIRECTIONS :

For the dough, combine the flours and salt in a mixer bowl. Using the dough hook and with mixer on low speed, add the butter and lemon juice. Add the ice water in a slow, steady stream, scraping up mixture from the bottom. Add just enough water so that the dough comes together. Increase the speed to medium; knead until smooth and stretchy, about 45 seconds.

Form into a rough rectangle; chill 1 hour. For butter mixture, fit mixer with paddle. Add the butter and flour; beat on low speed until smooth and malleable but still cool. Form butter into a block by pounding with a rolling pin on a floured surface.

Divide the butter block in half. Roll each half into a 5 by 7-inch rectangle. To assemble, roll the dough into an 8 by 18-inch rectangle. Place one butter rectangle in the center of the dough.

Fold over flap of dough to cover, pressing dough at edges to seal. Place the remaining butter rectangle on top of the enclosed butter. Fold the remaining flap of dough to cover, sealing with your fingers; the butter should extend fully into the corners.

Roll out the dough package in the direction of the open ends of folds into a 10 by 24-inch rectangle, dusting liberally with the flour and rolling in all directions. Do not roll over the ends of the dough. Fold the dough into thirds, business-letter fashion. Refrigerate 1 hour (first turn).

Rotate the dough block 90 degrees from the direction of the previous roll. Roll and repeat the 3-fold turn as before two more times (second and third turns). Refrigerate 45 minutes. Repeat the sequence, performing two more turns (fourth and fifth turns). Refrigerate at least one hour before rolling and shaping. Allow the sheet of rolled dough to rest in the refrigerator 15 minutes before cutting.

Every cook, from a home cook to a professional chef, loves fresh herbs. They are essential to preparing many recipes.

Whether you grow your own herb garden or buy them fresh from a local vegetable market, common kitchen herb garden plants are:

The herbs are best served fresh from the garden -- but, for longer storage, can be dried or frozen.

Fresh herbs surely add zest to your meals and enhance their flavor. However you should store them in the right way to prevent spoilage and lose of taste. Fresh herbs add a tantalizing flavor to many meals such as pasta, pizza and many other dishes. Many people grow them in their garden so that they are totally fresh when they are added to the dishes. Today we will have a quick look at the correct way in which fresh herbs can be stored.

First of all you should pick the herbs from your garden in the morning as the leaves are the freshest in that period of time. If you pick them up during the later part of the day then the leaves could be a little dried because of the sun. Herbs with long stems should be placed in small vase like flowers so that the herbs remain hydrated. You should ideally use the herbs within a few days after they are picked as with each passing day they lose a small percentage of their freshness.

For keeping herbs (with long stems) fresh for more days, they can be placed in a plastic bag in the fridge. The bag should be loosely draped at the top. This way the herbs are hydrated and cool and hence they will remain fresh for a longer period of time.

You can place the herbs in the vegetable drawer of your fridge in case they are to be stored for a short period of time. This way the herbs will remain fresh for at least a week. They can also be placed in a wrapped paper towel and then put in a Ziploc bag. In case you want to store the herbs for a longer period of time then you need to freeze them. You can start by tearing the stems and then chopping the herbs in fine pieces. You can then place them in a Ziploc bag and put them in the freezer.

Drying herbs is a very simple process, and there are three ways to dry herbs that are excess from your garden, given by a neighbor or obtained from your local farmer.
1. You can dry them naturally by hanging them in the garage or a warm dark place
2. You can dry them in the oven at a very low temperature for an extended period of time
3. You can wash and dry them completely and trim the fresh dill with scissors into a ziplock bag for freezing

To freeze fresh herbs, chop finely and measure standard amounts into ice cube trays. Once the herbs are frozen, remove the cubes from the tray and store in a labeled zip close bag in the freezer. Herbs frozen in this manner are especially good for adding to soups and sauces as a pre-measured amount can be dropped in during the cooking without the need for defrosting.

You need to also cut off any discolored or rotten parts. Different herbs should not be stored together. You should avoid rinsing the herbs unless it is required. You can simply dampen them a little and then pat them dry with a towel. Once they are dry you can place them in the Ziploc bag. Do not out the wet herbs in the bag as they will then begin to emit an odor.

Vegetables that have to be consumed later on have to be stored well in the fridge. Nothing is more frustrating than finding stale and spoilt vegetables in your fridge just because you didn't follow the necessary guidelines to store them properly. In order to ensure that your vegetables remain fresh, extend their shelf life and ensure that they don't lose the minerals and vitamins, they should be property refrigerated.

Today's refrigerators have a separate compartment for storing fruits and vegetables. The temperature in these compartments is lesser than the rest of the fridge. Vegetables and fruits produce a gas called ethylene over a period of time. This gas is harmless and odorless; however when the quantity of this gas increases in the refrigerator then the vegetables will get spoilt faster. Here are a few tips on storing different types of vegetables and fruits in the fridge.
In case you are storing asparagus then you should snip the stems from the base and put the asparagus soaked in a small amount of water. This will ensure that the asparagus remains fresh. Wilted broccoli can be placed in ice cold water as this will make the broccoli crisp. Vegetables such as cucumbers should be stored in a cool and dry place. If you have bought wine tomatoes then you should keep the stalks intact to increase their shelf life.

In case you are storing vegetables in a plastic bag then you should poke a few holes in the bag to make the vegetables "breathe". This way moisture will not accumulate in the bag. Vegetables and fruits should not be stored in the same drawer because of the potential buildup of ethylene gas. To ensure that the carrots remain crisp, you should store them in a plastic bag. This step will be able to extend their shelf life by up to 4 weeks. The leafy tops should be removed and they should be packed in special containers.

Vegetables such as egg plants, lettuce, mushrooms and broccoli have a shelf life of 7 days. Storing them in the special drawer will ensure that they remain crisp and fresh. The vegetables can also be stored in special plastic bags or Ziploc bags. This way, moisture is prevented from spoiling the vegetables. The vegetables should be put in the coolest section in the refrigerator to increase their longevity.

In her article "Fact, Fiction & Truth: The Perils and Joys of Writing Religious Fiction," author Elizabeth Cunningham describes her writing and readers' reactions to her Christian novel "The Passion of Mary Magdalen."

"You cannot make God a fairytale!" declared the woman in the second row, her face blotchy with outrage. "The Blessed Mother and Mary Magdalen are holy people. They would never act like the people in your book." (Who are guilty, from time to time, of humor, outspokenness, and occasional irreverence).

This appearance at a public library was the last of long drawn-out book tour. I'd presented my novel The Passion of Mary Magdalen close to eighty times all over the country in all sorts of venues. People always asked if my book had stirred up controversy, but in all that time I had never come up against this. Until that night.

"Your book is offensive. It is blasphemous. It has hurt me. God has anger," the woman warned. "If God were in this room right now," (which apparently he was not) "God would be so angry with you. You cannot escape the anger of God."

The rest of my audience -- mostly senior citizens from my aunt's Congregational church -- sat in embarrassed silence, except for one seminary student in the front row who clearly wanted a theological brawl. But this was my show.

"I hear that you are hurt," I said in my best counselor mode (my other hat) "and for that I am truly sorry. But I am not sorry I wrote the book. It was not written with intent to offend. It is my witness, my act of faith. But I will take what you say into my prayer life. Thank you all for coming."

And so I claimed the last word, the high moral ground, and a semblance of control and brought the harrowing evening to a conclusion.

The woman who informed me of God's wrath was the last to speak that night of a phalanx of conservative Roman Catholics. (At the other end of the continuum I count a Dominican Nun who once embraced me and said, "On with the revolution, sister!") The group did not identify themselves at the beginning of the presentation, just said they had seen the flyer for the event and were interested in the subject matter. I opened my performance with a dramatic recital of the prologue, set in "the hottest holy whorehouse in the Galilee," so my goose was well-cooked from the start, and there was nowhere to retreat when I finally realized who -- and what -- I was facing.

"Doesn't your conscience bother you?" one of the men had demanded, giving me my first clue. "God has given you a talent. You are responsible for its use. Don't you think you should use it for good? For telling the truth instead of misleading people?"

"No, my conscience doesn't bother me," I answered brightly. "And I'll tell you why. There are four Gospels, each one a different account, told from a different point of view for a different audience. The chronology of the Gospel of John in particular differs from all the others. The Gospels are much more like novels than they are literal, historical accounts. They are sacred stories intended to bring meaning to the lives of the listeners."

Needless to say, this claim that the Evangelists were fellow novelists did not cut it. Repeatedly I was told that my book was harming people's faith, because they might think my story was true. And if I wanted to know what Mary Magdalen was really like, I should read The Lives of the Saints, which tells the true story.

As people were leaving, my husband, who could not resist a parting shot, suggested to the delegation that perhaps they ought to buy the book and read it.

"Oh, no," said one of the men. "I never read fiction."

Interesting, I think, that this man eschewed all fiction, not just my blasphemous novel in particular. In our time fiction has come to mean the opposite of fact, and fact has become synonymous with truth. The concept of story, of poetic truth has gotten lost. Witness the furor over the not-very-original theories presented in Dan Brown's conventional thriller The Da Vinci Code.

Do we even know anymore what a theory is? It is not fact. It is someone using their mind -- their imagination -- to tell a story that might, or might not, turn out to be fact. Now the faithful are in an uproar over James Cameron's documentary about the discovery of what might (or might not) be the bones of Jesus and (gasp) his wife and child. One Baptist was quoted as saying that if the bones turned out to be authentic, it would destroy his faith, because then the doctrine of bodily Resurrection could not be true.

I want to say to this man: Why would you allow some dry bones to rob you of a powerful, living story? Bones or no bones, the Resurrection is, always has been, and always will be a Mystery. Yet I am sympathetic to anyone undergoing a crisis of faith for whatever reason, as I did when I lost my belief in orthodox Christianity, not because of facts, but because the Christianity I knew could not encompass a powerful and unexpected encounter with the divine feminine.

The church had been my container, and I had spilled out of it with no structure to take its place. No matter what I believed or didn't, I felt anguish and even terror to think that I might be abandoning and betraying Jesus. One sentence in a book by The Reverend Alan Jones got me through that time. I paraphrase: "If you have to choose between belief in Christ and your experience of the truth, choose the truth and trust that Christ will reveal himself to you in a new way."

Christ did reveal himself to me anew through the eyes Maeve, my fictional Mary Magdalen, a feisty, unrepentant Celt, who loves Jesus with all her heart, yet refuses to be a disciple. People frequently ask me if there is any evidence that Mary Magdalen came from the British Isles. My answer is: No. There isn't. The fourteen scriptural references to Mary Magdalen tell us very little except that she traveled with Jesus, helped support him, and stuck by him to the end and beyond. She is an open invitation to Midrash -- a Jewish tradition of storytelling to fill scriptural gaps. And I mean storytelling. The Rabbis were not out digging up facts, collecting evidence to mount new theories. They were spinning numinous tales to give us a deeper experience of divine and human nature.

C.S. Lewis, the Christian apologist, was also a brilliant novelist, best known for The Narnia Chronicles. I have never forgotten Lewis's spirited defense of story in The Silver Chair. The true prince of Narnia is a prisoner in an underground realm, and the children (from our world) accompanied by the dour Marshwiggle Puddleglum, have been captured by the wicked queen in their attempt to rescue the prince. She tries to hypnotize them, telling them that their memory of the world above ground is just a fairytale. At last Puddleglum rallies himself and cuts through the spell she is weaving:

"Suppose we have only dreamed, or made up, all those things -- trees and sun and moon and stars and Aslan himself. Suppose we have. Then all I can say is that, in that case, the made-up things seem a good deal more important than the real ones... That's why I'm going to stand by the play world. I'm on Aslan's side even if there is no Aslan to lead it. I'm going to live like a Narnian even if there is no Narnia."

The best stories teach us to be courageous in the face of danger, resourceful in times of hardship, kind to strangers and animals, discerning in making choices that are often not what they seem. They teach us listen to the wisdom within and beyond ourselves.

Cook Books & Recipes: History of Local, International, Ethnic, Professional and Family Cookbooks

Every cook has his and her favourite cookbooks.

We love our cookbooks -- old collections of local and family recipes, illustrated hardcover cookbooks, online cookbooks at sites like 101 cookbooks and the latest, healthy recipes on Culinary eBooks that can be stored on our computers by the hundreds...

A History of Cook Books:

A cookbook is a kitchen reference that typically contains a collection of recipes. Modern versions may also include colorful illustrations and advice on purchasing quality ingredients or making substitutions. A wide variety of books cover cooking techniques for the home, recipes and comments by famous chefs, institutional kitchen manuals, and cultural commentary situated in a larger community.

Some recipes will note how long the dish will keep and its suitability for freezing. Nutritional information, such as calories per serving and grams of protein, fat, and carbohydrates per serving, may also be given.

Earlier recipes often included much less information, serving more as a reminder of ingredients and proportions for someone who already knew how to prepare the dish.

Recipe writers sometimes also list variations of a traditional dish, to give different tastes of the same recipes.

The earliest "cook books" on record seem to be mainly lists of recipes for what would now be called haute cuisine, and were often written primarily to either provide a record of the author's favorite dishes or to train professional cooks for banquets and upper-class, private homes. Many of these cook books, therefore, provide only limited sociological or culinary value, as they leave out significant sections of ancient cuisine such as peasant foods, breads, and preparations such as vegetable dishes too simple to warrant a recipe. But this is just the beginning of the popular history of cookbooks.

Cook-books that serve as basic kitchen references (sometimes known as "kitchen bibles") began to appear in the early modern period. They provided not just recipes but overall instruction for both kitchen technique and household management. Such books were written primarily for housewives and occasionally domestic servants as opposed to professional cooks, and at times books such as The Joy of Cooking (USA), La bonne cuisine de Madame E. Saint-Ange (France), The Art of Cookery (UK, USA), Il cucchiaio d'argento (Italy), and A Gift to Young Housewives (Russia) have served as references of record for national cuisines.

Related to this class are instructional cookbooks, which combine recipes with in-depth, step-by-step recipes to teach beginning cooks basic concepts and techniques. In vernacular literature, people may collect traditional recipes in family cookbooks.

International and ethnic cookbooks fall into two categories: the kitchen references of other cultures, translated into other languages; and books translating the recipes of another culture into the languages, techniques, and ingredients of a new audience. The latter style often doubles as a sort of culinary travelogue, giving background and context to a recipe that the first type of book would assume its audience is already familiar with.

Professional cookbooks are designed for the use of working chefs and culinary students and sometimes double as textbooks for culinary schools. Such books deal not only in recipes and techniques, but often service and kitchen workflow matters. Many such books deal in substantially larger quantities than home cookbooks, such as making sauces by the liter or preparing dishes for large numbers of people in a catering setting. While the most famous of such books today are books like Le Guide Culinaire by Escoffier or The Professional Chef by the Culinary Institute of America, such books go at least back to medieval times, represented then by works such as Taillevent's Viandier and Chiquart d'Amiço's Du fait de cuisine.

Single-subject books, usually dealing with a specific ingredient, technique, or class of dishes, are quite common as well; indeed, some imprints such as Chronicle Books have specialized in this sort of book, with books on dishes like curries, pizza, and simplified ethnic food. Popular subjects for narrow-subject books on technique include grilling/barbecue, baking, outdoor cooking, and even recipe cloning.

The best cookbooks may be bestsellers or beloved but unknown to the general public. Generally, the top cookbooks have a wide readership.

Community cookbooks (also known as compiled, regional, charitable, and fund-raising cookbooks) are a unique genre of culinary literature. Community cookbooks focus on home cooking, often documenting regional, ethnic, family, and societal traditions, as well as local history. "The Devil Inside" (2012) film has been a surprise success in early January of the new year.

Written and directed by William Brent Bell and starring Fernanda Andrade, Simon Quarterman, Evan Helmuth and Ionut Grama, the supernatural horror movie has surprised critics and fans with its sales.

NOTES: "The Devil Inside" should not be confused with "Devil In Me." The film was not inspired by the horror-themed third-person shooter video game of the same name, which was released in 2000 by Cryo Interactive.

Rotten Tomatoes gave it a negative review, concluding that "The Devil Inside is a cheap, choppy unscary mess, featuring one of the worst endings in recent memory." But not all reviews of the new movie have been negative. Steve "Uncle Creepy" Barton of Dread Central had a positive review of the movie, saying, "The Devil Inside is home to moments that will shock, scare, disturb, and leave you gasping. This clip goes to a place you don't expect. At least, that's what I thought when Paramount passed along this exclusive look at The Devil Inside, opening January 6. The film, directed by William Brent Bell, is the latest entry in horror's faux documentary/"found footage" sub-genre. Like The Last Exorcism before it, it deals with the supernatural, moreover, exorcists. Out of context, I have no clue where this clip fits into the story...but damn. If you missed it, also check out this "living image" from the flick.

Pot Bears: Latest News on the B C Pot Bears & the Mounties

When the squad of Royal Canadian Mounted Police descended on the illegal marijuana grow-op in the wilderness of British Columbia, they were well aware of the potential dangers they could meet. Heavily armed grow operators. Deadly booby-traps. Solar powered electric fences. The presence of "pot pirates" raiding the illegal plants in what the police call "grow rips."

But -- they were not expecting BEARS!

Fourteen black bears were apparently patroling and guarding the grow-op field of thousands of pot plants in the Christina Lake area of British Columbia.

"In thirty years working in these mountains, I've seen a lot of bears. But I've never seen that. There were big bears, little bears, groups of bears," said Sergeant Fred Mansveld of the Nelson Detachment of the RCMP. "It just goes to show you what length people will go in this business to secure their operation."

Sgt. Mansveld didn't believe that the bears were there to deter the Mounties, but to protect the illegal plants from pot bandits.

Feeding stations had been set up to feed dog food to the bears, perhaps mixed with a little marijuana. "Maybe they mixed some pot into the food. It's possible it's why they were so laid-back. They were just lolligagging around," the Mountie said, saying that the bears had even formed friendships with a racoon and pot bellied pig on the grow-op site.

BBC News quoted Sergeant Mansveld as saying, "They were tame, they just sat around watching. At one point one of the bears climbed onto the hood of a police car, sat there for a bit and then jumped off." BBC News then concluded, "In Canada, feeding bears is illegal as it leads to bears associating food with humans and increases the likelihood of bears coming into towns and cities to look for food." BBC News was just one of many international news agencies reporting the story. The UK Telegraph reported "Cannabis Growers Use Bears As Guards" and "Wild Dopey Bears Found in Drugs Raid!" The NY Daily News reported "Canada Cops Encounter Bears Surrounding Marijuana Fields."

The Toronto Star quoted RCMP Corporal Dan Moskaluk: "As the members are conducting the search of the house, at one point in time the (grow-op suspect) has to shoo a bear out of the residence and out of the way, coming out of the basement. The owner tried to assure, 'Don't worry, they won't become aggressive towards you, just don't approach them and things will be fine.' Certainly it's a little bit of an odd situation to be in." Referring to the pot-bellied pig and a raccoon, Cpl. Moskaluk explained, "The pig was a little frantic at the sight of police, but the raccoon was pretty laid back about the bust and took it all in stride."

Allen Piche, the forty-something man charged with planting the illegal cash crop and feeding the bears (along with his partner Kathleen), made a statement online. "Hi, my name is Allen. I'm the guy at Christina Lake who's been feeding the bears." He explained that it all began about ten years ago when he "began trying to nurse one bear back to health." Over the years, it expanded until he was putting out several kilograms of dog food a day.

Piche said that he had struck a deal with conservation officers to "keep giving the animals dog food until they leave to hibernate in early October." He made this statement after news got out the conservation officers might have to kill the bears.

"They've assured me we will not be killing any bears this fall," Piche stated. "We're going to take these bears right on through to hibernation, and that will give us an entire winter to come up with better solutions. We want a happy ending."

Superintendent Rick Hildebrand, of the provincial conservation service, said that Piche and his partner were allowed to continue to feed the bears, explaining at the time, "If we cut them off cold turkey, then we are concerned about sudden rash change of behavior," Hildebrand said. "It's kind of allowing them to simulate natural behaviour as much as possible so they can go to den and not cause any public safety issues."

The Mounties said that it wasn't clear if the couple accused of feeding the bears -- and now facing drug charges -- were using them to guard their pot plants or were keeping them as cute but big pets.

The couple is also being investigated for violations under the provincial Wildlife Act, such as feeding and leaving attractants out for dangerous wildlife. Piche faces fines of $100,000 for the first offence.

Allen and Kathleen Piche's trial on the grow-op charges is scheduled for February, 2012. Under the Harper government's new omnibus Crime Bill, the Piche's are facing a minimum of two years in federal prison.

The story made news around the world. Not only in newspaper, TV news broadcasts (such as CNN, BBC, CBC and Fox News) and satellite television sources such as Sky News, but also online, such as Google News and Yahoo News. It even made Youtube under the heading, "13 Bears Surround Police in a Pot Field."

The international uproar over word that some of the B C Pot Bears have been destroyed, including an online petition called "Save Bears Found in Drug Bust," might save some of the remaining bruins' lives. A Calgary woman named Doreen McKrindle launched the Facebook group "Help Save the B.C. Black Bears." Vancouver-born actor Jason Priestley has made a $1300 donation to the cause.

Should the Piche's have fed and domesticated the wild bears in the first place? After all, these were not cute honey pot bears or Berenstain Bears or teddy bears or even Hershey Bears. They were wild black bears living in the Canadian Northwoods.

Since the RCMP bust at Christina Lake, Conservation officers have killed 24 bears in that area.

"I can't confirm one hundred percent that they are the grow-op bears. But given the number we've dealt with, I think it's likely that some of them could be," stated Inspector Aaron Canuel of the British Columbia Conservation Service.

“It’s not within the natural hierarchy of bears in a particular area to have that many large male bears all together in one specific area. On average, in the Christina Lake area we’re dealing with four to six bears maybe a year. We’re up to nineteen -- pretty likely that a lot of those bears resulted in severe habituation by Allen Piche.”

However, Inspector Chris Doyle of the Conservation Service has few doubts where the bears came from. Doyle stated, "The bears are approaching people and searching for non-natural food around other people's houses and simply not being scared off and actually approaching people for food." He added that it was impossible to say whether any of the bears that were being fed eventually returned to the wild.

Quick and Easy Mexican Bean Salad

Mexican food is increasing in popularity. For nutrition and a healthy and delicious meal that will please the whole family, try the easily made Mexican bean salad.

Prep time: 20 minutes ....Yield: 8 servings

This salad, with its spicy taste is sure to become a favorite! For speed, we are using canned beans, so be sure to check the sodium content and try to find the products with the least amount of sodium as possible. Remember, you are going to have great flavors in the spices so not a lot of salt is required.

Ingredients:

1 - 14 oz can of black beans, rinsed and drained

1 - 14 oz. can of kidney beans,rinsed and drained

1 - 14 oz. can of cannellini beans, rinsed and drained

1 green bell pepper, diced about the size of the beans

1 red bell pepper, diced about the size of the beans

10 ounces of frozen corn, thawed

1 red onion, diced small

½ cup of red wine vinegar

½ cup of olive oil

2 Tablespoons of lime juice

1 Tablespoon of lemon juice

3 Tablespoons of sugar

1/2 Tablespoon of salt

2 clove of garlic, diced small

¼ cup of chopped cilantro

½ Tablespoon of ground cumin

½ Tablespoon of pepper (black or white)

1 teaspoon of a medium hot pepper sauce

½ teaspoon of chili powder

Preparations:

In a large bowl, combine the drained beans, chopped peppers and onion and stir in the frozen corn. Set aside. In a smaller bowl, blend the oil, vinegar, lime and lemon juice, salt, sugar, garlic, cumin, cilantro and pepper. Add the chili powder and mix. You might want to add the hot pepper sauce a little at a time, tasting as you go. If you know you like it, just add the entire 1 teaspoon and stir to blend. Pour the blended dressing over the vegetables and mix well. Chill for a least an hour to allow the flavors to blend.

When I make Mexican Bean Salad I like a medium Hot sauce such as original Cholula, which is available in most grocery stores. Cholula also makes a hot sauce with chipotle pepper, which is a nice change as it adds a little "smoky' flavor.

Beans are a great source of fiber, as well a good source of protein and plant nutrients, that help cut the risks of heart disease, diabetes and some forms of cancer. A serving of beans, contains enough protein as a serving of meat, fish or poultry. Try to include at least 4 servings of beans in your diet per week, replacing some of the meat meals when possible.

They thrive either in fresh water lakes, brackish water and salt water. When cooked, the flesh is white as milk (why it is called milkfish, of course) and lots of needle like fish bones in it's flesh. Widespread throughout the islands -- but the most tasty ones come from Dagupan (northern part of Luzon, Philippines).

Stuffed Milkfish (Rellenong Bangus) Recipe:

1 large sized bangus ( milkfish )
1 onion, chopped finely
4 cloves garlic, minced
1 small sized carrot, small cubes
1 box raisins ( optional )
2 tomatoes, chopped
1 raw egg, large
1 tsp. MSG
1 tsp. Salt
dash Worcestershire sauce
1 green bell pepper, chopped finely
2 tbsp. Flour
cooking oil for frying

* Scrape fish scales. Clean. Gently pound fish to loosen meat from the skin. Use flat side of a knife in pounding.

* Break the big bone at the nape and on the tail. Insert the end of the handle of an aluminum kitchen turner (sandok) through the fish neck.

* Gently scrape down the handle between the meat and the skin. Scrape down to the tail, going around and on the other side of the fish.

* If you feel the meat is entirely separated from the skin, remove the handle, squeeze and push out meat (with the big bone), starting from the tail going out through the head. This way, you will be able to push out the whole meat without cutting an opening on the skin.

* Marinate skin and head of fish with soy sauce and calamansi ( lime ) juice. Set aside. Boil fish meat in a little water. Drain. Pick out bones. Flake meat.

* Saute garlic until brown. Add onion and tomatoes. Stir in fish meat, carrot, and pepper. Season with salt, vetsin, ground pepper, and Worcestershire sauce. Add raisins.

* Transfer cooked mixture to a plate. Cook, then, add raw egg and flour. Fill in mixture in bangus skin. Wrap bangus in wilted banana leaves or in aluminum foil. Fry. Cool before slicing.

* Garnish with sliced fresh tomato, spring onions or parsley. Serve with tomato ketchup.

Mangoes and lanzones are among the well-known and most loved of these fruits. How to Create Literary Fiction: 5 Tips to Writing Literary Stories

As a book reviewer, I get anywhere from fifty to one hundred review requests a week. Of these, I might accept five or so. While I do occasionally take nonfiction books, most of what I accept will be in the genre known as literary fiction.

But just what is literary fiction? What differentiates literary fiction from what most publishers class as commercial or genre oriented fiction, and why am I biased towards it? It's a question I get asked regularly. Some, like author David Lubar ("A Guide to Literary Fiction," 2002) equate the label with work that is pompous, dull, plotless, and overly academic: "If you're ever in doubt about whether a story is literary, there's a simple test. Look in a mirror immediately after reading the last sentence. If your eyebrows are closer together than normal, the answer is yes."

Publishers often use this label for work which defies other genre distinctions, eg it isn't romance, isn't "chick-lit," isn't science or speculative fiction, isn't a thriller, action, or political drama. It is meant to denote a fiction which is of higher quality, richer, denser, or, as the literary fiction book club states, work which "can make us uncomfortable or can weave magic."

These distinctions aren't always clear, and there are some superb exceptions to the genre rule, such as Margaret Atwood or China Mieville, whose high quality work fits the speculative fiction genre, or Umberto Eco and Iain Pears, whose work is full of mystery and suspense. All writers feel that their work is high quality, and most write fiction with the goal of producing great work. So how can we ensure that our work is literary fiction rather than some other form?

Here are five tips to guide writers who are inclined to produce literary fiction:

1. Aim for transcendency. The one quality which seems to be present in abundance in literary fiction and much less so in other forms, is what agent and author Noah Lukeman calls "transcendency." What does transcendency mean? It isn't easy to define, and in his exceptional book, The Plot Thickens (St Martin's Press, 2002), Lukeman presents a number of points, such as multidimensional characters and circumstances, room for interpretation, timelessness, relatability, educational elements, self discovery, and lasting impression. I would say that transcendency equates to depth, to writing which does more than entertain its readers, and instead, changes something, however small, in the way they perceive themselves. How do you get transcendency in fiction? With a deep theme, deep and powerful characters, complex plots, and exceptional writing skills. Sound easy?

2. Read quality literature. This is a lot easier than transcendency, though not unrelated. Since achieving literary fiction is a subtle and difficult thing, you've got to develop your literary senses. The best way of doing that is to read books which fit this genre. If you want to create literary fiction, chances are, you probably are already reading it. These are books by the writers we call "great." Your list of names may differ from mine, but these are the writers who win prizes like the Booker, the Pulitzer, the Commonwealth Prize, and the National Book Award to name just a few. The more great literature you read, the better able you will become at recognising the elements which make a fiction literary.

3. Don't get defensive! Lubar's article is fun, but literary fiction isn't meant to be snobbish, academic, plotless, or boring in any way, just well crafted. That may be daunting if you are a writer, but it won't help your work to shrug off quality by calling it dull or unachievable.

4. Re-write. This may be the single most important distinction between literary and other types of fiction. Work which is timeless takes time. There's no other way to achieve literary fiction than re-writing, dozens, and maybe many more, times. It isn't glamorous, nor is re-writing dependent on a muse or inspiration like the first draft is. It is just going over and over a work until every word is relevant and integral to the story. This process cannot occur solely in the fingers of the author. Every writer of literary fiction requires an ideal reader, a critique group, a mentor, or someone who can provide the kind of objective advice which will transform your inspiration into a stunning creation.

5. Don't stress about it! Of course there is no point in worrying so much that you get writer's block. If you read great books, write fiction which is true to your own creative vision, and revise (with feedback from others) until the work is as perfect as you can make it, you will produce literary fiction. That's all there is to it. Writing a novel is about as hard as writing gets. Writing literary fiction can take years, often with little reward, at least until the book is completed (and in many instances, thankless even after publication, assuming you are published). But if you can't stop yourself; if the desire for producing something truly beautiful outweighs utilitarianism, then you are really and truly a literary writer and your work will have transcendency.
