A Chef's Library: Cookbooks, Chef's Biographies, Culinary Mysteries

 

If you love cooking and love books, the result is Shelves and Shelves of Cookbooks and Food-related material.  My wife, Mary Lee, and I have accumulated a Foodie's Library lifetimes in the making.

Lots of Atlantic Coast cookbooks, of course.  Seafood and local ingredients reign supreme.  We treasure those beat-up spiral cookbooks put out by local writers, publishers and ladies groups.  Don't know how many copies of OUT OF OLD NOVA SCOTIA KITCHENS by Marie Nightingale (God bless her) we've gone through.

Old books like the original Fanny Farmers.  FARM JOURNAL'S COUNTRY COOKING.  BALANCED RECIPES ("Prepared Under the Personal Direction of Mary Ellis Ames, head of the Staff of Pillsbury's Cooking Service") is a treasured 1933 classic with steel ring releasable binding in a durable aluminum box/binder with Art Deco illustration.

Lots of National and International cuisine.

Mary Lee gained a popular following with her TIERS OF JOY - "Wedding and Special Cakes - Delivery and Catering Available!"  The girl is a natural baker.  Some of her most referenced books include CAKES & CAKE DECORATING by Rosemary Wadey, THE COMPLETE BOOK OF CAKE DECORATING edited by Bridget Jones -- and the Wilton Cake Decorating Yearbooks.

I still have my big blue PROFESSIONAL CHEF ("Prepared by the Culinary Institute of America") from my Holland College Culinary Course.  Favorites are SEAFOOD AS WE LIKE IT by Anthony Spinoza and Jean-Jacques Paimblanc.  LA CUISINE by Raymond Oliver.  THE ART OF MEXICAN COOKING by Diana Kennedy.

And books about the great cooks.  MEMORIES OF MY LIFE by Auguste Escoffier.  THE GRAND MASTERS OF FRENCH CUISINE: Five Centuries of Great Cooking by Celine Vence and Robert Courtine.

And MY LIFE IN FRANCE by Julia Child.

Anthony Bourdain began to show the inside of real kitchens in KITCHEN CONFIDENTIAL.  Since then, there have been dozens of books that have opened those swinging doors into the steamy, hectic kitchens -- a personal favourite is Michael Ruhlman's THE SOUL OF A CHEF.

 

An increasing problem has become -- where do we put our expanding library?  Some of the less perused tomes have gone into cardboard boxes in our Book Room (a small walk-in attic upstairs, over our kitchen, where less wanted books are reluctantly stored).

The upside of modern technology (for an original Luddite like me) is the eBook.

Now we can fit an entire new Library of Cookbooks in our computers.  A few clicks of the keys...

Paleo Recipes for the Modern Caveman!

The caveman was primarily a hunter and gatherer who ate the foods that his environment provided. The caveman had no agricultural skills and did not preserve his food. The caveman had great hunting and fishing skills and abundance of wild plants, vegetables and fruits.

The caveman ate an equal mix of proteins, carbohydrates and fats. This is important as many nutritionists recommend NOT eating from just one food group -- but to eat balanced meals from all the food groups. Dairy products were not available to the caveman.

Meals like grilled or roasted pork, beef and chicken -- along with broccoli, carrots and sweet potatoes are part of the Paleo diet. Desserts are usually made from fruits like strawberries and citrus. There are several different types of salads, but the main meals are made fresh with natural foods containing no preservatives. Processed foods are not allowed.

The advantages are many as not only do people lose weight from the meals but they are able to have more control of their appetite. Many preservatives are known to actual increase one's appetite making them eat even more.

People on the Paleo diet have more energy and are not weighed down with fatty foods. Their skin is healthier and they have a greater immune system. Probably the greatest thing about the Paleo diet is you greatly lower the risk of chronic disease like colon cancer, diabetes and heart disease. This is believed to be from avoiding processed foods with high level of fats and preservatives.

Research shows that primitive cultures from times past were healthier than we are today. They were stronger and leaner than we are. Their eating focused on meat, fish, fruits, vegetables, nuts and berries.

Those foods are what we are genetically designed to consume. Looking at it in terms of proteins, carbohydrates, and fats, their daily intake was about 33% of each.

Today, about 50% of our intake is carbohydrates while only 15% is protein. That's right - it really is all about the carbs!

Our ancestors did NOT eat grains and dairy products.  And, of course, they did not have trashy processed foods to tempt them. Scientific and culinary research is revealing that those foods are causing us to be fat, less healthy, and more susceptible to disease.

The problem for us is that it is so easy to overeat processed carbs. Have you ever eaten a whole container of ice cream or a whole bag of potato chips? Try overeating fresh broccoli or baked chicken breast -- not as easy, eh?
